Hey guys! I decided to start this blog because I am in love with cooking vegan food and showing people the meals I put together. I have a Instagram account you can find me on @veganhigh where I show a lot of the food I eat. I get asked daily for recipes or if I have a blog or something to show more detail of what I put together so today I decided its time to take that next step and create a blog where I can show detailed recipes. This blog will be mostly for food but every once in a while I might touch on other topics that are important to me. To tell you a little about my self my name is Lauren Nicole and I am 30 years old living in the beautiful city of Colorado Springs. I have lived here the majority of my life and all of my family is mostly here so I consider this home. I am a self employed barber that has been cutting hair for 12 years only the last 3 years I have been working for myself and I couldn't imagine doing it any other way! I have 2 fur babies that I spoil rotten a cat named Precious and a dog named Gucci. I love them dearly. I went vegan back in May of 2014. Before doing this I said the same story every one says which is "I could never go vegan I love my meat" lol. I really didn't even know what veganism truly even was. I worked with a girl who was a vegetarian and that was the first time I had ever met someone who didn't eat meat, I thought she was borderline crazy lol but getting to know her it all started making sense. I decided to go pescatarian first. My reasoning was because of all the crap they put in the meats and bc it was really bad for our health. My pescatarian diet didn't last long because I still hadn't educated myself on how to receive proper nutrition on a mostly meatless diet, I was still consuming large amounts of dairy and eggs and eating way more fish than I was supposed too, and I still wasn't all the way aware of the evil practices of the meat, dairy, and fishing industries. I also had no clue how all of this was effecting the entire planet. So I didn't last long, I felt weak and had a million excuses to just return back to my regular meat eating diet. As time went by I started educating myself more on the topic and watching a lot of you tubers who were vegan and after a while I was sold. My boyfriend and I decided to begin our vegan journey together. At first it was kind of hard and sure there were slip ups but you cant let those make you quit altogether. No one supported my decision lol people will try and tease you with meat and tell you that you need protein and will become unhealthy, and this is just a phase or whatever but now almost 3 years later I'm actually inspiring some of those same people to reduce their meat intake. I still haven't turned anyone vegan but I have no doubt that eventually I will. That is one of the reasons I'm doing this blog is because so many people have a misconception of what it means to be vegan. I want to show people how simple and delicious it can be and you don't have to be rich or have access to health stores. I cook way more now as a vegan than I ever did as a meat eater, the options are endless. Going vegan is by far the best decision I have ever made. It feels amazing to know that by the choices I make I am respecting not only my own health but also the beautiful planet the creator allows us to walk on as well as every species put here along side of us. We are witnessing the rate of cancer, heart attack, diabetes, stroke, obesity jump drastically before our eyes. America in particular is in need of a diet change bc the standard American diet is killing more people than drugs, crime, police brutality, or any other way to die you can think of. If in my life I encourage even one person to go vegan I will be satisfied. But hopefully with this blog I can encourage many! Look forward to seeing tons of great recipes all cruelty free and all filled with love. No one has to die to enjoy a great meal!
