Brocoli Potato Cheddar Soup





This is one of my favorite comfort foods by far. Its creamy filling and full of whole food ingredients that are good for you. These ingredients will make a large pot of soup and you will need a high speed blender!
 Ingredients:
5 potatoes
4 heads of broccoli
2 carrots
1 bunch of green onions
plant milk 
veggie broth
raw sunflower seeds or cashews
nutritional yeast
cumin
garlic
salt and pepper
rosemary
thyme
paprika

Directions:
1. Steam 3 chopped potatoes, and carrots for about 20 minutes then add broccoli for another 10 minutes.
2. Bake the other 2 potatoes until soft
3. In your blender add steamed potatoes and half of the broccoli and half of the carrots
4. Add about 2 cups of veggie broth to blender along with salt, pepper, garlic, and a couple tbsp. of nutritional yeast. Blend on high for about 1 minute or so until everything is creamy. You can add more broth if needed.
5. Add mixture to a large pot and set on medium low temperature stirring occasionally
6. Take the rest of the broccoli and carrots and cut into pieces so you have chunks and add to the soup. Do the same with the baked potatoes. Stir everything together.
7. Now add about 1 cup of sunflower seeds or cashews, about 1/2 a cup of milk, and 1/2 cup of nutritional yeast into the blender. Add more milk if its too thick add more nutritional yeast if its too liquidy.
8. Blend everything until you have a thick queso consistency.
9. Add cumin, salt, pepper, and half the bunch of green onions and blend more.
10. Pour creamy mixture into the pot with the rest of the soup and stir together. 
11. Chop the rest of the green onion finely and add to the soup.
12. Add any more salt pepper, rosemary, thyme, paprika, or any other seasonings you would like (I go heavy on the black pepper) and let the soup simmer for about 15 minutes stirring occasionally.
13. Serve and Enjoy!

This soup is perfect served up in a bread bowl or just with bread and a salad on the side. I also topped it with crispy onions but you can add any topping you like!
